Soy Sesame Salmon with Mango Coconut Salsa

Flavorful and delicious.

Ingredients:

(Serves 2-4 depending on how much salmon)

For coconut mango salsa:
1 ripe chopped mango
1/4 cup chopped green onion
1/4 cup Coconut King Shredded Coconut
Juice of 2 limes
2 tablespoons honey
1 tablespoon chopped cilantro

1 package salmon

Cooking the salmon. Preheat oven to 400 degrees. Pat salmon dry. Season with salt and pepper. Heat up cast iron skillet with coconut or avocado oil. Sear both sides of salmon about 3 mins each side turning with a spatula. Place in the oven skin side down and cook for 6 mins. Flip the salmon and cook for another 6 minutes skin side up. Serve salmon in a bowl over rice or lettuce with the salsa spread on top and drizzled with more lime juice. If you like spice add sriracha or chili sauce.
