Coconut Pumpkin Soup

A comforting fall recipe.

Ingredients:

(Serves 2)

2 cloves garlic, minced
24 oz. pumpkin puree, fresh or canned
1 can coconut milk (13.5 oz.)
1 cup Coconut King Shredded Coconut
Juice of 2 limes

Combine garlic, pumpkin puree, coconut milk, Coconut King Shredded Coconut and lime juice in a large saucepan. Simmer for 20-30 minutes until the flavors meld. Season with salt and pepper. Use stick blender to puree until very smooth. Serve immediately in bowls and garnish with more shredded coconut, sweet chili sauce and basil or cilantro.
