Sweet Potato Bake
Healthy and comforting.
Ingredients:
(Serves 2-4 as a side dish)
1 bag Coconut King Purple sweet potatoes
3 tablespoons olive or avocado oil
1/2 tablespoon salt
1 teaspoon red pepper
1 teaspoon dried rosemary
Preheat oven to 400 degrees. Thaw the sweet potato and thinly slice. Arrange in an oven safe pan and drizzle with the oil. Season evenly with salt, red pepper and rosemary. Bake for 20-30 minutes until edges are crispy. Serve immediately.
