Grapefruit Lime Toasted Coconut Salad
A zesty, flavorful main or side dish.
Ingredients:
(Serves 2)
1 cup Ruby Red grapefruit, peeled and thinly sliced
1/4 cup shallot, peeled and thinly sliced
1/2 cup Coconut King Shredded Coconut (lightly toasted in the oven)
1 cup cilantro
For dressing:
1 tablespoon oil (sesame or olive oil)
1 teaspoon fish sauce
Juice of one lime
1 tablespoon brown sugar
To toast coconut: Turn on broiler and spread desired amount of coconut on a baking sheet. Please on middle rack so it’s not too close to the flame. Broil until lightly browned stirring occasionally. Watch carefully because the coconut will burn easily.
For salad: Chop cilantro and plate. Peel and slice one ruby red grapefruit and plate. Thinly slice a shallot and add to the mix. Top all with our shredded coconut lightly toasted.
For dressing: For dressing combine oil, fish sauce, lime juice and brown sugar. Mix until sugar dissolves and all is very well combined and drizzle on salad.
