Coconut Pad Thai

A simple, savory meal.

Ingredients:

(Serves 2)

2 tablespoons coconut or avocado oil (for sauce)
2 teaspoons coconut or avocado oil (for coconut chunks)
1 tablespoon hot chili sauce
1 tablespoon brown sugar or coconut sugar
Juice of two limes
1 tablespoon nut butter of your choice (almond, sunflower seed, etc.)
1 tablespoon minced garlic
1/2 cup soy sauce or tamari
1 cup Coconut King Coconut Chunks
2 tablespoons chopped green onions
1 package pad thai noodles

In a sauce pan heat and stir oil, chili sauce, sugar, lime, nut butter, garlic, and soy sauce in a saucepan on low and stir until well combined. Meanwhile heat on low in a frying pan and stir: 2 teaspoons oil and coconut chunks. Heat about 7-10 mins until coconut softens and browns a bit. Then stir in the sauce. Cook pad thai noodles according to package. Drain and rinse with cold water immediately so that noodles don’t stick together and then stir into coconut and sauce mixture until the noodles are well coated. Serve immediately and garnished with more lime and chopped green onions.
