Coconut Harvest Bowl
A wintery salad with a tropical touch.
Ingredients:

2 cups greens, arugula or spinach
1/2 cup garbanzo beans
1/2 cup Coconut King Shredded Coconut
1/4 cup dried cranberries
1/2 apple, thinly sliced
1/4 cup kabocha squash, roasted
Our Coconut King Shredded Coconut is the star of this plant based fall harvest bowl. Begin with a bowl of greens, we used spinach and argula. Top with 1/2 cup garbanzo beans, 1/2 cup of our shredded coconut, dried cranberries, apple slices, roasted squash and any other fallish ingredients you desire. Dress with balsalmic vinegar or dressing of your choice. Lunch is served!
