Coconut Ceviche

A vegan take on a delicious appetizer.

Ingredients:

(Serves 4)

2 cups Coconut King Coconut Chunks
1 cup finely chopped cherry tomatoes
1 cucumber peeled and chopped
1 whole avocado finely chopped
1/4 cup chopped cilantro
1/4 cup finely chopped red onion
1/4 cup olive oil
1 tablespoon cumin
Salt and pepper to taste
Chips, for serving

Our Coconut Chunks are a great stand in for fish in ceviche. This makes a filling but healthy lunch or appetizer. Mix all ingredients a bowl until everything is well coated with the oil, spices and citrus juices. Serve immediately with chips.
